A word from Scott Williams

The first time I processed one of Jo’s goats I’d never seen a product like it – the flesh a deep red, the fat perfectly white, with actual marbling through the muscles, reminiscent of wagyu beef! A supplier of mine walked in whilst I had one of these beauties on the bench and he immediately assumed it was a fattened sheep; he couldn’t believe a goat could look so healthy. I chopped a cutlet off and threw it straight on the grill. After eating it, I knew immediately that I’d be using this product for a long time. 

 It’s a sweeter, lighter-flavoured meat, and undeservedly underrated in this country. Having said that; I’ve cooked it plenty of different ways across our venues and the uptake on the product has always been amazing. I’m lucky enough to have a central kitchen at Fabbrica in the Sydney CBD with a small butchery setup. This allows us to order in a whole goat once a week, hanging it to dry-age for a further week. The chefs across the group put dibs on which cuts they want and chef Tom C breaks the beast down as per their request.
